  • 4 bone-in skin-on chicken thighs (or boneless if preferred)
  • 2 cups chicken broth
  • 2 tablespoons flour or 1 tablespoon cornstarch
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter or oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon Worcestershire sauce optional
  • ½ cup heavy cream or milk optional for creamier gravy

INSTRUCTIONS

Step 1: Sear the Chicken

  • Pat the chicken dry and season with salt, pepper, and paprika.
  • Heat oil or butter in a large skillet over medium-high heat.
  • Sear the chicken skin-side down for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes.
  • Remove the chicken and set aside.

Step 2: Make the Gravy

  • In the same skillet, sauté onions and garlic until soft.
  • Stir in the flour and cook for 1-2 minutes until golden brown.
  • Slowly pour in chicken broth while whisking to prevent lumps.
  • Add Worcestershire sauce (if using) and simmer until thickened.

Step 3: Combine and Cook

  • Return the chicken to the pan, cover, and simmer on low heat for 15-20 minutes until fully cooked.
  • Stir in heavy cream for extra richness.
  • Let the chicken rest for 5 minutes before serving.

NOTES

Tips for the Best Chicken and Gravy
  • Use bone-in, skin-on chicken for the best flavor.
  • If the gravy is too thick, add more broth. If it’s too thin, let it simmer longer.
  • For extra depth, deglaze the pan with a splash of white wine before adding the broth.
  • Pair with mashed potatoes, biscuits, or rice for a complete meal.
