  • 4 boneless skinless chicken breasts (or 6 bone-in, skin-on chicken thighs)
  • 1 cup long-grain white rice uncooked
  • 1 ¾ cups chicken broth

For the Creamy Sauce:

  • 1 can 10.5 oz cream of chicken soup
  • 1 can 10.5 oz cream of mushroom soup
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt & black pepper to taste

Optional Add-Ins:

  • ½ cup shredded cheddar cheese – For a cheesy twist.
  • 1 cup frozen mixed vegetables – For extra nutrients.
  • ½ teaspoon red pepper flakes – For a spicy kick.

INSTRUCTIONS
 

Preheat the Oven

  • Set your oven to 350°F (175°C).

Prepare the Rice & Sauce

  • In a mixing bowl, combine:
  • Chicken broth, cream of chicken soup, cream of mushroom soup, and seasonings.
  • Stir until smooth, then pour the mixture into a greased 9x13-inch baking dish.
  • Add uncooked rice, spreading it evenly.

Add the Chicken

  • Place the chicken breasts or thighs on top of the rice mixture.
  • Sprinkle with paprika, salt, and pepper.
  • Cover the dish tightly with foil to trap moisture.

Bake Low & Slow

  • Bake at 350°F (175°C) for 1 hour 15 minutes.
  • Remove the foil and bake for 15 more minutes for a golden top.
  • If using cheese, sprinkle it on in the last 10 minutes.

Rest & Serve

  • Let the dish rest for 5 minutes before serving.
  • Garnish with fresh parsley or shredded cheese for extra flavor.
