- 1 lb steak sirloin, ribeye, filet mignon, or New York strip
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp butter
- 1 clove garlic minced
- 1 tsp black pepper
- ½ tsp salt
- 1 tsp mirin or rice vinegar
- 1 tbsp green onions sliced (for garnish)
- 1 tsp sesame seeds optional
Step 1: Prepare the Steak
Pat the steak dry to remove excess moisture for a better sear.
Season with salt, black pepper, and garlic powder.
Let the steak sit at room temperature for 10 minutes.
Step 2: Heat the Pan or Grill
Heat a cast-iron skillet, griddle, or hibachi grill to 450-500°F (230-260°C).
Add sesame oil and allow it to heat until shimmering.
Step 3: Sear the Steak
Place the steak on the hot surface and sear for 2-3 minutes without moving.
Flip and cook for another 2-3 minutes for medium-rare (adjust for desired doneness).
Sear the edges for 30 seconds per side if using a thick-cut steak.
Step 4: Add Butter & Sauce
Reduce heat to medium and add butter and minced garlic.
Pour in soy sauce and mirin, tilting the pan to baste the steak.
Step 5: Rest & Serve
Remove the steak from heat and let it rest for 5 minutes.
Slice against the grain for tenderness.
Garnish with green onions and sesame seeds.
Serve with fried rice, sautéed vegetables, or noodles.
Tips for the Best Hibachi Steak
- Use high heat for a perfect sear and deep flavor.
- Don’t overcrowd the pan—cook in batches if needed.
- Rest the steak before slicing to keep it juicy.
- For extra flavor, add a splash of teriyaki sauce in the final minute of cooking.
